Blueberry Coconut Ice Cream (Gluten- & Dairy-Free)
This creamy treat was made in honor of World Autism Awareness Day. Several amazing kids are on gluten- and dairy-free diet programs. The promoters from the awareness motion urged everyone to use blue on April 2nd. Blueberries appeared like the most obvious tribute.
⅛ teaspoons Salt
1 teaspoon Vanilla Extract
In a moderate saucepan, combine blueberries, glucose, and salt. Over medium heat, provide the mixture to a boil, mashing the blueberries with the trunk of the fork. Simmer for 5 minutes, stirring frequently. Remove from heat and let cool for 10 minutes.
In a blender, combine coconut milk, the blueberry mixture, and vanilla extract. Cover and chill the combination until chilly, about 2 hours.
Pour the combination into the plate of an glaciers cream manufacturer and freeze based on manufacturer’s instructions. Transfer the ice cream to an airtight container and place within the freezer for many hours, or until glaciers cream hardens. The ice cream can be kept in the refrigerator for 1 week.

This is a very tasty sorbet. I also reduced the sugar and made it with peaches instead of blueberries, because that’s what I had on hand. Great tasting!

Creamy sorbet! I somewhat decreased the sugar, too, but still discovered it plenty sweet more than enough. The coconut milk sort of includes a unusual aftertaste if you ask me, but it’s still a delightful dairy-free deal with that’s super simple to prepare.
