So for the present time I think I’ll adhere to one lady things until the guy of my dreams (who may resemble Joshua Jackson aka Pacey from Dawson’s Creek) makes my entire life. Plus if I had a boyfriend I probably couldn’t escape with making him consume quinoa and kale rather than manly beverage battered onion rings and mugs of BBQ sauce… or whatever Burger Ruler is advertising this week.
What are your thoughts on that?

Let’s move ahead discuss adult points. Like salads.
My mom used to produce a big batch of uncooked kale salad with lemon, essential olive oil, garlic clove, and bell peppers. She’d let it still a couple of hours until the lemon juice broke down the kale and the tastes became melded together; it was sensational.
It’s like a healthy little fairy tale I dreamt up. The happy ever after is that taste explosion in your mouth.
Juicy mangoes, crimson onion, grape tomatoes, creamy ripe avocado, nutty quinoa, crunchy kale, and edamame. This salad just might have everything I’ve ever wished.
We tossed it in a little lemony basil vinaigrette which takes about 5 secs to mix together since it’s slightly lemon, garlic essential olive oil, basil, salt, and sugar.
The much longer the salad sits using the dressing, the better it gets.
This salad may be the perfect lunch. Or it would be great with grilled fish.
It’s just too dang great never to try.
Kale, Edamame, and Quinoa Salad with Lemon Vinaigrette
Ingredients
2 cups cooked quinoa (or around 3/4 cup uncooked quinoa)
1 1/2 cup edamame beans, prepared and cooled
3 cups finely chopped Tuscan kale, ribs removed
1 cup sliced up grape tomatoes
1/2 red onion, diced
1 avocado, pitted and either sliced or diced
2 tablespoon toasted almonds or pumpkin seeds, if desired
For lemon vinaigrette:
1 garlic clove, minced
1/8 teaspoon salt
Instructions
To make dressing: place essential olive oil, lemon juice, garlic, sugar, basil, and salt in blender or food processor. Mix/process for 10-15 secs; set aside.
In medium dish toss quinoa, kale, and edamame collectively; add lemon vinaigrette and toss so that the salad is fully coated. Put in place refrigerator for 20-30 mins to let tastes soak in.
Before serving, toss salad again and add tomatoes, onion, mango, and avocado. Garnish with toasted almonds or pumpkin seeds if desired.
Oh no! Certainy you would reign in a man with fantastic taste in food. Probably you’ll get as lucky as I did, and find yourself a guy whose notion of an excellent weekend is usually apple picking, pie baking, cider making, and spinach couscous with oranges and olives for dinner.
The point is… not all dudes want Burger Ruler or BBQ. Beverage, maybe. But that’s a different story.
Oh I feel you over the man-food vs our-food controversy.. As an perpetually solitary girl with a recent man put into her life, I can tell you it will likely be a hard changeover. Him.. not really me. I refuse to stop producing kale salads!

Good thing with my boyfriend is the fact that being a chef, he also loves great healthy food. And the casual 400 g of beef with potatoes. Ugh.

Kale from a farmers market and Niagara peaches (substituted for mango) produced this salad popular. Leftovers ideal for lunch. Ahh, summer months!
I’ve also produced Monique’s egg, avocado, bacon, jack sandwich and the chicken breast, chick pea cut salad – all delish!
Great formula! I added some diced serrano pepper for an extra kick. Also I usually add ghee + ocean salt to boil using the quinoa. The mango was a delicious deal with.
Ha don’t discredit most of us guys so fast! Yes, the beer battered fried onions might be a little hard to avoid.. However this is a great snack for also the manliest of manly guys, especially after a day out within the mountains! Deliciously refreshing.
We will definitely be taking in this tomorrow!
