Hey men! I’m thrilled to be back for my third 12 months of I’ll Bring the Cookies! This is my favorite blog page event of the year and I must say, I was pretty sad a couple weeks ago when I thought I hadn’t been invited to the party. Lucky for me though, I got a message from Katrina several days later wondering if her request had been delivered to spam.
Anyway, We am Amanda and my blog is Fake Ginger It’s mostly food. And I discuss my dogs a lot. That’s virtually it.
Pistachios are sort of my issue this year. Pistachio snow cream, pistachio pudding, pistachios on salad. I am all about the pistachio. Back in the summer I needed a full unpleasant week of small cuts under my fingernails from a pistachio eating session that lasted method longer than it will have. It was bad.
I have since learned to get the already shelled pistachios.
If you love pistachios like me personally, you need to try these cookies. Salty pistachios with lovely sugars cookie dough and tart cranberries? Seriously. Is there a better combination? My kids usually refuse to eat cookies with nuts but they were popular with all three of them.
Cranberry Pistachio Cookies
Salty pistachios with special sugars cookie dough and tart cranberries- just about heaven.
1 (3.4 ounce) box pistachio pudding mix
1/2 cup dried cranberries
Line 2 baking bed sheets with parchment paper.
Whisk together glucose cookie mix, pistachio pudding blend, and cauliflower risotto almond milk flour. Don’t worry about clumps.
Increase butter and eggs. Make use of an electric mixer to beat until mixed, about 2 mins.
Use a rubber spatula to collapse in pistachios and cranberries.
Bake 9 – 11 mins or before edges certainly are a very light golden brown. Cool completely on a wire rack.
