I’ve gone a bits nut products on the cooking for Memorial Day weekend. Today I made Mini Lamingtons, and also a Sour Cream Chocolate Cake I simply love lamingtons, they’re a flavor of home for me. I came across this formula for the Mini Lamingtons within the cuisine section of the Sydney Morning Herald and I just converted it to imperial measurements and it worked really well.
1 stay soft butter, chopped
3/4 cup super fine sugar
1/2 tsp vanilla extract
1/2 tsp vanilla extract
4 tablespoons Dutch cocoa
5 ounces boiling water
Preheat oven to 350F.
Using a power mixer, defeat butter, sugars and vanilla until light and creamy. Add eggs one at a time, beating well after every. Stir in combined sifted flour and baking powder alternating with milk and stir until smooth. Spoon mixture into a greased and lined square tin and bake for 25-30 minutes or until cooked when tested having a skewer. Stand in tin for ten minutes before turning from a wire rack to cool. Wrap in plastic wrap and keto strawberry shortcake cheesecake store for 1 day.
Combine all substances with 5 oz . boiling drinking water and blend until simple. This mix will be extremely runny.

However before we go to the recipe, I’d like showing my daughter’s new family pet, Pochungo…..sometimes nation life is merely wonderful 🙂
Now let’s continue using the recipe –
It is an excellent tasting cake.
Chocolate Lamington Pub Cake
¾ glass superfine sugar
¼ glass cocoa powder
4 Tablespoons milk
1 teaspoon butter
1 ½ Tablespoons sugar
1. Preheat oven to 350ºF. Lightly grease and series bottom of the 3 x 10 loaf pan.
2. Cream butter and sugar until light and fluffy. Gradually add eggs, beating well after each addition. Sift together flour, baking natural powder, cocoa powder.
3. Pour mixture into the skillet and bake for 40 moments or until toothpick happens clean. Let cool for 5 minutes in pan then turn on to a cable rack to great completely.
4. Mix chocolate potato chips, milk and butter in a heat proof bowl and place more than a pan of hot water. Stir until chocolate is melted. Add confectioner’s sugar and beat until smooth. Let awesome until frosting gets solid enough to spread. Cut a V shape wedge from the top of the wedding cake, reserve cake wedge. Frost the cake and cover with coconut flakes.

And I know it’s not wise to drown your sorrows with meals, but somedays it requires something similar to a (No-Bake) Coconut Lemon Meltaway Ball to cause you to feel immediately better.

For this week’s Tried & True Tuesday, I am posting a new beloved dessert, COCONUT CAKE SQUARES!!!1 year ago
I had my first flavor of a heaven pictured above, a few years ago, through the holidays within my friend Sandi’s home. Sandi can be my buddy that also distributed the Homemade Sourdough Ranch Pretzels , Texas Caviar and Fiesta Corn Salsa dishes. She distributed this yummy dessert again at her last barbecue. These delicious little beauties reminded me of the dessert Natalie of NorthShore Times from New Zealand, and Mel of Mellywood’s Mansion from Australia, are constantly raving about – small sponge cakes dipped in chocolate icing and rolled in coconut known as Lamingtons. After getting the Coconut Wedding cake Squares recipe, I did a quick Google search….it turns out they are LAMINGTONS! Now I understand the love fest these two have because of this fantastic dessert. Delicate, delicious, oh so good. So good in fact, it’s the only dessert I’m asking for on my 40th birthday. 40 yummy cakes with 40 candles…all for me. I’m kidding of course, I’ll share…well….maybe.
Coconut Cake Squares
1 Box of Light Wedding cake – Bake according to package within a 9×13 baking dish lined with foil and sprayed with non-stick cooking spray.
1 cup Hershey’s Cocoa (unsweetened)
1 1/4 glass Sugar
2 cups Great Macaroon Coconut
Directions – (see important tips below)
Bake cake as directed and cool.11 months ago Place cake in freezer until frozen.
Within a sauce pan, combine cocoa, sugar and water and bring to a boil over low heat. Boil for 5 minutes, stirring often (mixture will be thin). Great to room temperatures.
Next, remove cake from freezer and trim into squares or bars. Dip the squares one at a time in the chocolate mixture, completely covering the cakes, after that place on cooling rack to drain.
Next, move the cakes in coconut, being sure to coat the entire surface of the squares very well. I had formed a huge amount of extra apples so I decided to make use of apples as my bottom fruit instead.

It is soft, creamy and incredibly sweet; perfect cool for breakfast time or warmed for dessert.
Bottom line, it’s too easy to pass up.
Preheat oven to 350 levels.
Butter 9″ pie plate and then dirt with a coating of sugar.
