Flourless Almond Butter Chocolate Chip Cookies For Kate1

I’ll be in Minnesota all of those other weekend catching up with family and friends, plus doing the complete Easter brunch thing. As a youngster, Easter used to be among my favorite vacations. Probably because I loved all the delicious chocolate bunnies and lovely things. I believe my Mom got me an Easter container each year until I had been about 16… until the 12 months she didn’t and I threw an entire fit. As in, I literally looked the entire home looking for my Easter container because I believed she was kidding when she stated she didn’t obtain me one. It was such a particular tradition if you ask me and OMG the way i used to like JellyBelly beans and Reese’s eggs. Mother… still looking forward to my Easter container… you’ve still got time! HINT.
More often than not though I’m about making factors for others. I really like being back because it gives me the opportunity to bake as much things as you possibly can without concern with them going poor. Yesterday I made my mom slim banana delicious chocolate chip muffins (one of her favorites) and tomorrow I’m thinking about baking a batch of cookies for some friends.
It also recently occurred to me that baking from the heart, whether for yourself or others, is incredibly particular. Baking is usually both a skill and a research and like I’ve discussed earlier, a little sweetness often seems to brighten any day time. It really hit home with me as I was baking these cookies therefore I’d love to share just a little tale with you…
Here’s Kate’s email:
Best,
Kate
After reading Kate’s words, I reached out to her and we were able to connect. I knew that I needed to bake something special simply for her that was easy, delicious and may match her dietary needs. Above all, I wanted Kate to experience motivated to bake because in the end, that’s what she loves to do. I know she’d approve of these Almond Butter Cookies. They’re easy, delicious in support of need a few elements. Plus they’re flourless and there’s no butter involved, so you are not dealing with a huge mess to clean up.
If you’re not too busy this weekend, I encourage you to definitely bake up a batch of these cookies to not only support Kate, but to share them with somebody you like. (Seriously they only take about a quarter-hour!) If you end up making them, make sure to label #ambitiouskitchen on Instagram therefore Kate and I can check out your creation and be baking friends.
Have an amazing weekend you guys! Here’s for you, Kate. xo!

Total time:
20 mins
Ingredients
1 teaspoon cooking soda
1 teaspoon cinnamon
1 cup creamy all natural almond butter (I used Trader Joe’s)
1/2 cup coconut sugar
2 teaspoons vanilla extract
1/3 cup chocolate chips
Instructions
Preheat oven to 350 levels F. Line baking sheet with parchment paper.
In normal size bowl mix jointly the oats, cinnamon and baking soda; set aside.
In the bowl of an electric mixer, beat almond butter, coconut sugar, egg, almond milk and vanilla until even, about 2 minutes. Mix in dry ingredients with a wooden spoon, then lightly fold in chocolate chips.
Use cookie scoop to drop dough on prepared cooking sheet, placing them 2 inches apart. If you’d like fat cookies, leave them as is beef liver good for diabetics definitely. If you want your cookies a little bit flatter, after that press the dough down with the palm of your hand.
Bake cookies for 9-10 a few minutes and remove when edges barely commence to turn a golden brown. The cookies may appear just a little underdone, but they will continue steadily to cook as soon as you remove them from your oven. Cool for five minutes within the cookie sheet after that transfer to some wire rack to great completely. Do it again with remaining cookie dough. Makes 18 cookies.
To ensure this recipe is gluten free, use gluten free oats.
You may use quick oats instead of rolled oats.
Feel absolve to substitute the coconut sugars with brown glucose if that’s what you possess on hand.
