No Bake Gluten-Free White Chocolate Raspberry CheesecakeOH MY GOODNESS. These bars. No seriously, theeeeeseeeee bars.
Anyway, leaving my day obsession and onto these ridiculously great tasting ooey-gooey bars that I created together with Peapod If you remember, I am developing fun meals for them within the last few months for his or her new site It has been wonderful to encourage others to step into the kitchen and make creatively or bake something comforting.
This time I wanted to generate something unique and various that you can bring to your friends and relations with delightful surprise. That would leave them speculating what were in the bars, but additionally leave them begging for mere seconds. These will live up to your expectations and some. PROMISE.
In every seriousness, my favorite section of these bars is how wholesome they’re. Today I realize they contain sugar (organic!), but the elements themselves are wholegrain, gluten free, filled with healthy extra fat and packed with nutrition. In order to feel somewhat good about indulging in these this wintertime.
I mean, perhaps you have ever seen any other thing more gorgeous? Now just image how they TASTE. Or better yet, let me perform my greatest at describing the most fabulous flavor mixture.
The bottom and top of the bars are made up of oat flour, oats, organic brownish sugars, coconut oil, vanilla and just a little salt. The bars are wonderfully crunchy on underneath for a solid base that doesn’t fall apart. Simply made sure you pack and press the club base into the bottom from the skillet tightly; this can make sure that the crust bakes equally.
Next up may be the filling. Comprised of times and espresso powder (or instant espresso!); you’ll create a pass on in your food processor. After you spread it all over the pubs, you’ll sprinkle the very best with dark chocolate chunks and cover again with some of the oat mixture. That’s it!
The result is a gluten free oat bar with a thick, gooey chocolate and time filling. They’re rich, scrumptious and all you want this time around of year.
I hope you like these as much as I did. Be sure to tag #ambitiouskitchen on Instagram in the event that you make these!

1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup melted coconut oil
3 oz your preferred dark chocolate club (a minimum of 70%), coarsely chopped (dairy products free/vegan, if desired)
Instructions
Preheat oven to 350 degrees F. Collection a 8×8 inches pan with parchment paper so that you’re able to easily remove the bars after. That is essential! Grease the parchment paper with non-stick cooking spray.
Prepare the filling first: Add dates, warm water, and espresso powder to a food processor or high-powered blender and mix until even, about 2 minutes. Allow day mixture to great and thicken for five minutes while you make the bottom.
To help make the oat bottom (and crumble): In a large dish, combine oat flour, oats, cooking soda, brown glucose, cinnamon, sodium, and vanilla. Stir in melted coconut oil until the mix can be crumbly. Measure out 1 glass from the mix and reserve in a small bowl (this will be for the topping). Press the rest of the mix into the prepared pan; you’ll need to press very difficult to ensure that all of
the blend will stick together well.
Next spread time mixture evenly on top of the bottom crust. Sprinkle on chopped dark chocolate then sprinkle the reserved oat topping over the top. If you want you can even sprinkle the chocolates with a bit of coarse ocean salt for any salty and nice combo. Bake bars for 30-35 mins or until best is defined and slightly golden brown. Transfer to cable rack to cool for at least one hour, after that remove from pan to cool completely. Makes 16 bars. Bars are best kept within the fridge and are delicious when offered chilled in addition to at room temp.
To make completely vegan: Make sure you use a vegan chocolate bar. Theo makes a nice 85% vegan chocolate bar.
To create gluten free: Make use of gluten free oat flour and gluten free lemon zest cheesecake totally free oats.
If you’d like you may make these bars minus the espresso powder, they will still be delicious and also kid-friendly!
