Incredible Peanut Butter Quinoa Granola Bars1

Sadly her wallet was stolen while we were away shopping. Tis the growing season for thieving? Ugh! A whole lot worse, she had some pretty essential documents in there. But the good news is definitely that people got her back on the aircraft secure (lacking any ID)! I guess the TSA knows even more about you than you think.
Now I’m ready to get back on track regarding feeding on, training and function. I haven’t exercised in weekly because I’ve been fighting a significant chest infections (roughly I think). I cannot really sleep during the night because my coughing helps to keep me up. Regardless of how much ZzzQuil I chug, it’s still there. I think I might possess a NyQuil hangover; is that possible?

Why not begin RIGHT NOW? Yes, I realize there are holiday cookies EVERYWHERE which may be awfully tempting. Rather than indulging in one from those pushy coworkers, think about we replace a number of the cookie indulgences with a wholesome granola bar instead? Yes, yes, yes.
These granola bars were created in partnership with my friends at Ancient Harvest My pantry is stocked with Ancient Harvest quinoa because I take advantage of it a minimum of three times per week. This time, I wanted to do something just a little different and unique: quinoa IN granola pubs. And yes, it’s uncooked – or rather, toasted within the oven with the oats. Consequently you obtain crunchiness and chewiness, something that most granola pubs out there absence.
The base of the granola bars are made of quinoa, oats, peanut butter, honey, chia, vanilla and a touch of coconut oil. That’s it! I really like they are wholesome, basic and modifiable. What’s great about these bars is that they offer over 3g of fiber and nearly 7g of organic protein. Of course, if you’re like me, you almost certainly will love tossing in a few chocolate potato chips or dried cranberries.
Since these bars are essentially zero bake, they’ll stay chewy and fresh for long once you make them. You can store them covered tightly in the freezer for weeks and get them whenever you’re in need of one. Enjoy! xo.

Ingredients
1 cup gluten free of charge rolled oats
1/2 cup uncooked Ancient Harvest quinoa
1/2 cup creamy natural peanut butter (or your preferred organic nut butter)
1/8 teaspoon salt
1/4 cup honey
Instructions
Preheat oven to 350 levels F. Add oats and quinoa to a large cooking sheet and spread around consistently. Once oven is definitely preheated, toast the oats and quinoa for ten minutes. Once completed toasting, put oats and quinoa into a medium bowl and stir in chia seed products.
While quinoa and oats are toasting, help to make the peanut butter mix with the addition of peanut butter, ocean salt, honey, vanilla and coconut oil in medium saucepan over low temperature. Stir every so often until the combination is soft and creamy. Remove from temperature and allow to cool for a couple minutes, then add to the bowl with the oats, quinoa and chia. Mix well to incorporate. If adding delicious chocolate chips, wait a few momemts before stirring in, otherwise they will melt. Another option is to melt the chocolates chips and drizzle them outrageous of bars.
Range an 8×4 or 9×5 inches loaf pan with parchment paper; pour blend in and spread out evenly, then press blend down within the pan. Place in fridge for 10-20 a few minutes or until combination has solidified. Remove bars from skillet and cut into 8 pubs. Store bars in the freezer or refrigerator. Enjoy!

To make bars vegan, use maple syrup or brown rice syrup instead of honey.

I really like these granola pubs! I have tried cooked quinoa in granola pubs before but I have found how the granola bar is very moist actually after baking. Toasting the quinoa appears like a great choice!
Do you have any ideas for replacing the peanut butter? Just wondering how I can make them school friendly once we are not allowed nut products of any kind at school.
