Pepper Jack Stuffed Turkey Zucchini Meats Loaf with Awesome Sauce
HEALTHY LOW CARBOHYDRATE Turkey Zucchini Meats Loaf filled with pepper jack and topped with great tasting sauce EVER!
Zucchini, zucchini, ZUCCHINI. It’s overtaking my entire life. I’m uncertain I mind a lot, but I can let you know that I’m getting sick of shredding the zucchini. I’ve a few more to consume but from then on I don’t believe you will see another zucchini recipe from me in quite sometime. My right arm physically hurts from zucchini shredding symptoms. Yes, it’s officially a symptoms (in the AK book anyhow).
I realize I am doing various baked goods with zucchini which means this time I needed to bring you something a little savory such as this turkey zucchini meatloaf. I determined that adding some zucchini to some turkey meatloaf would not only be a great way to obtain my veggies in, but also to add dampness (since I take advantage of lean turkey).
And as if that wasn’t more than enough, I just needed to throw in just a little pepper jack in the middle because I’m about just a little kick. It’s funny, I actually don’t consider pepper jack to become spicy; my Mom used to serve jalapenos at just about any meal so I think my tastebuds have modified to the point where I can pour oodles of Sriracha on my foods without any effect.

So, for all of you mamas around or meal preppers this is an excellent healthy recipe and makes terrific leftovers. I was chowing down on it for a few days with a good sweet potato privately.
The awesome sauce is well… AWESOME. It’s sweet but spicy and really adds a ton of flavor to the meatloaf. (It’s originally from my lentil loaf formula)
And do not put that Heinz corn syrup stuff on your meatloaf. Yes I simply said that; don’t hate me!
I’m a HUGE fan of ketchup (as in I put that sht on everything and I don’t buy Heinz), nevertheless, you can easily produce delicious EASY homemade awesome meatloaf sauce yourself. Rely upon the power of this recipe.

Ingredients
1 cup finely diced white onion
1 cup shredded zucchini, squeezed of extra moisture having a paper towel
2 cloves garlic, minced
1 egg, slightly beaten
1/2 cup italian design panko breadcrumbs (may use GF breadcrumbs)
2 tablespoons organic ketchup
1 teaspoon dijon mustard
1/2 teaspoon ocean salt
For the topping:
1/2 tablespoon honey
1 tablespoon mustard
dash of hot sauce
Instructions
Preheat oven to 375 degrees F. Line huge cooking sheet with foil and spray with nonstick cooking spray.
In a large bowl combine turkey, onion, zucchini, garlic, egg, breadcrumbs, spices, mustard and sodium and pepper. Use the hands or a large spoon to combine until well mixed. I discover that it’s easier to combine the ingredients if you are using your hands.
Place 1 / 2 of meat mixture about foil-lined pan and shape into a 10×4 inch rectangle. Best with pepper jack consistently, departing about an 1/2 inch of room on the sides. Top with the rest of the meat combination, enclosing the mozzarella cheese completely and sealing the side collectively.
