Now that peaches are getting into time of year, I thought it would be fun for this month’s Almond Air flow formula to feature my favorite juicy summer fruits. I’ve been loving peaches and nectarines recently – they’re great with ordinary Greek yogurt or cottage mozzarella cheese and some nuts for a wholesome and quick breakfast. Next in the peach-love docket was clearly muffins.
Do you men remember once i was completely enthusiastic about muffins? For those who have been reading for cauliflower risotto keto recipes a couple years right now, you’ll know that there was a period back the blog’s early days where I basically distributed a muffin formula every week It had been kind of out of control. This recipe pairs sweet, juicy peaches with almond and oat flour (it is possible to either grind your own using rolled oats or buy it pre-ground) to keep carefully the muffin gluten free. FYI – should you choose need this formula to remain gluten free, be sure to purchase GF certified oats or GF qualified oat flour Usually, it is possible to sub entirely wheat pastry flour for the oat flour if you like! You can also swap out the coconut sugar for regular sugars if you’d like, and if you are not a coconut enthusiast, don’t worry, you can’t taste the coconut oil (or glucose) with this recipe!
Here’s the formula. Hope you like them! If you are not dairy free, try one crumbled on top of Greek yogurt or cottage parmesan cheese for any protein-packed breakfast time or treat, or have one using a couple hard boiled eggs. Ideal as a wholesome on the go meal!
Dairy & Gluten Free of charge Peach Muffins
Prep Time: 10 minutes
Cook Period: 25 minutes
These muffins are light, fluffy, and perfectly peachy! They’re the perfect addition to any breakfast spread whether you’re gluten free or not. With wholegrain oats, healthy excess fat, and special, juicy peaches, you can’t fail.
1/2 cup almond flour
1/4 cup ground flax
2 teaspoons baking powder
1 teaspoon baking soda
1/3 cup melted coconut oil
1 1/2 cups diced peaches + more for topping (optional)
Preheat oven to 350 degrees F.
Whisk together the oat flour, almond flour, flax, baking powder, and baking soda in a large bowl.
In a separate bowl, stir collectively the coconut sugar and melted coconut oil. Add the eggs and Almond Air flow, stirring until even.
Add the damp ingredients towards the dry, stirring until simply combined. Add in the diced peaches.
Divide the batter consistently among a muffin tin (greased to prevent sticking, or use paper muffin cups) and best with extra peaches, if desired.
Bake for 20-25 a few minutes, until a toothpick inserted in to the middle of the muffins happens clean.
