It’s just that since I made a commitment to follow the #SummerSWEATseries workout routines and some from the meal plans, I’ve made a conscious work about the quantity of sugars and sweet treats I’ve been putting into my body. When I do indulge it is almost always a spoonful or two of vanilla almond butter or some dessert chia proteins bars that I’ve been making (coming soon!). But lately brownies have already been on my mind; you all know that usually I’m obsessed with cookies but I am craving delicious chocolate like no other.
When I’m cooking for myself (or your blog), I try and be mindful of the ingredients that I’m using, making sure that most are all natural and unrefined. I also tend to like odd hippie dippie healthy things in my own sweets, like chickpeas and dark beans, or occasionally even avocados. This time, I had been set out on baking a grain free, paleo brownie with coconut flour.
I’ve been addicted to coconut flour recently (if you couldn’t tell). Trader Joe’s gets the cheapest coconut flour I could find and the task of baking with it is fun for me personally. Plus LOWER CARBS FTW.

Ingredients
3 eggs, at room temperature (IMPORTANT)
1/2 cup 100 % pure organic maple syrup (Quality B is best)
1/2 teaspoon vanilla extract
1 tablespoon almond butter (or any nut butter of choice)
1/3 cup unsweetened cocoa powder (TJ’s or Ghirardelli is definitely good)
1/4 cup coconut flour (I used Investor Joe’s)
1/2 of the Aloha Superfood Chocolates bar (about 1.1 oz), coarsely chopped into chunks
Coarse sea salt, for sprinkling
Instructions
Preheat oven to 350 degrees F. Grease an 8×8 inch pan with coconut oil or spray with nonstick cooking spray. Within the bowl of an electric mixer (you can also use a food processor or do it yourself), add coconut oil, eggs, maple syrup, vanilla and almond butter; combine on medium swiftness until well combined.

Please work with a 8×8 inch pan for baking these. A 9×9 inch pan could be too little and your brownies will end up being very thin and delicate. Another choice would be to bake them in two 8×4 inches loaf pans.

I like baking with protein powder but lately the best way to utilize it is to make protein sludge. Immediately after a workout I blend 1 scoop protein powder, water and handful of maple syrup or uncooked honey together. I like to best it with peanuts and almonds and sometime use cocoa or cacao powder.
1 scoop protein powder
1 tbsp cocoa powder
1/2 tsp baking powder
~1/4 c almond milk
Combine and microwave for the best tasting mug wedding cake that’s packed with protein.

I love to mix my protein natural powder with yogurt and top with fruit and nuts like a post workout snack

For protein powder I honestly want to use it the simple way. In smoothies! Delicious chocolate vega blended with ice, cashew milk, couple of spinach, cocoa powder, peanut flour somtimes, frozen banana and delicious chocolate stevia drops. So delish following a workout!
My favorite method to make use of protein powder is directly, no chaser! I love a plant-based protein shake (usually vanilla) with banana, coconut milk, almond butter & ocean salt first thing in the morning!
