Hey guys! I’m excited to be back again for my third yr of I’ll Bring the Cookies! That is my favorite blog page event of the entire year and I must say, I had been pretty sad a couple weeks ago once i believed I hadn’t been invited towards the party. Lucky for me though, I acquired a note from Katrina a few days later wondering if her invite had been sent to spam.
Anyway, I am Amanda and my blog is Fake Ginger It’s mostly food. And I talk about my dogs a whole lot. That’s virtually it.
Pistachios are kind of my point this season. Pistachio snow cream, pistachio pudding, pistachios on salad. I am all about the pistachio. Back the summer I had developed a full miserable week of tiny slashes under my fingernails from a pistachio eating session that lasted way longer than it should have. It had been bad.
I have since learned to get the currently shelled pistachios.
If you value pistachios like me, you must try these cookies. Salty pistachios with sugary glucose cookie dough and tart cranberries? Come on. Is there a better combination? My children usually won’t consume cookies with nuts but we were holding popular with all three of them.
Cranberry Pistachio Cookies
Salty pistachios with lovely sugar cookie dough and tart cranberries- virtually heaven.
1 (3.4 ounce) box pistachio pudding mix
1/2 cup dried cranberries
Line 2 cooking bed sheets with parchment paper.
Whisk together sugar cookie blend, cauliflower risotto spinach pistachio pudding blend, and flour. Don’t be worried about clumps.
Put butter and eggs. Make use of an electric mixing machine to beat until combined, about 2 mins.
Use a plastic spatula to fold in pistachios and cranberries.
Bake 9 – 11 mins or before edges are a very light golden dark brown. Cool completely on a wire rack.
