MAKES: 6-8 servings
1/4 cup cornstarch
1/8 teaspoon salt
2 tablespoons butter
3 medium firm bananas
Slice cookie dough in two widthwise. Let one portion stand at area temp for 5-10 a few minutes to soften (come back the other half towards the refrigerator for another use).
Press dough onto underneath and up the sides of the ungreased 9-in. pie plate. Bake at 375° for 11-12 a few minutes or until gently browned. Cool on the wire rack.
In a large saucepan, combine the sugar, cornstarch and sodium. Stir in milk until smooth. Cook and mix over medium-high heat until thickened and bubbly. Reduce high temperature; cook and stir 2 minutes longer. Remove from heat. Stir a small amount of warm filling up into egg yolks; come back all towards the pan, stirring continuously. Bring to a soft boil; cook and mix 2 minutes much longer. Remove from the heat; mix in butter and 1 teaspoon vanilla.
Spread 1 cup filling up into prepared crust. Cut bananas; arrange over filling. Pour remaining filling over bananas. Refrigerate for 2 hours or until arranged.
In a large dish, beat cream until it begins to thicken. Add confectioners’ sugars and staying vanilla; beat until stiff peaks form. Spread over pie. Refrigerate for 1 hour or until chilled. Produce: 6-8 servings.
Sweet Light Wine
Enjoy this recipe with a nice white wine such as for example Moscato or a lovely Riesling.
